What would happen to a typical Udipi joint if the idli batter does not ferment/ rise by morning...
Would they not serve idlis that day?
Would they outsource and sell? In which case, they will purchase as FG- idli itself or the batter alone?
Would they give substandard idlis?
What do you think?
Answers stating that I have become mad/ velaa are not valid.- too obvious an answer !

My guess would be that they'd add soda n serve it as is to the customers.

I was passing by swathi snacks on the way to the airport early last morning and it looked so dull... got me thinking
hmmmm. soda- yes but they will antagonise the regulars no?
Reminds me of a funny incident. When we were in Phoenix, USA, we had a Tamilian family as neighbours. We had then made many trips to the Grand Canyon. Once we all had gone on a trip to the Grand Canyon in December, to see it in the snow.. The lady had made idlis to take along. They had almost frozen by the time we ate them. Her husband said something to her which upset her and made her daughter laugh. Sometime later she came to me and mumbled something about how she could not help it that the idlis had become hard enough to be broken by a stone as the #$%*&$ idli batter just won't rise properly in this cold country. I too had this experience and would not try making idlis. This was in 1997 and I'm sure the problem is taken care of.

- IF such a situation does arise I think they would say "idili over madam suda ghee roast tharava?"
- If it is a Idili Joint then am sure they will have a Disaster recovery plan in place :b
I think they mix in the previous day's very sour batter to ensure such disasters never happen!!
They wouldn't serve idlis that day and apologise to the regulars.
- No yesterday's batter.
- No outsourcing
- If the disaster recovery is not in place, they will have one.
- They might stall and say it would be available another time and get batter from other Udipi enterprises.

Would like to add that I was just as angry as my friend at her husband for embarrassing her in front of all of us.
I don't think they rely on chance (natural environmental conditions) to get the batter to rise. I'm sure they have a 'sure shot recipe' for ensuring it.

Like the first commentor, I am thinking of cooking soda to help ferment the batter or mixing some left over batter...
SO many people have given answers already..but coming to think about it...all hotels have backup plans for everything...milk curdling...curd turning sour in heat...food turning bad during peak hours...hotels have their network..to balance their food stuff..and it goes on behind the scenes that we do not get to know abt it....
